Cebu is known as the home of the best lechon makers and traders of the Philippines, that's why it is claimed as the Lechon Capital of the world. Additionally, American chef Anthony Bourdain acknowledged Cebu's lechon as the best one.
Lechon is a national dish of the Philippines. Special occasions (birthdays, feasts, weddings) are incomplete without having lechon on the table.
The word Lechon came from the Spanish word that refers to roasted suckling pig. It is famous in Spanish-speaking countries as well.
After seasoning, Lechon or "roasted suckling pig" is being skewered as a whole and cook over charcoal. The rod which it is attached to is turned as rotisserie motion. This motion cooks the meat evenly and allows its own juice to comes out.

The group visited Rico's lechon slaughterhouse located at Highway 77, Talamban, Cebu City, 6000 and had a tour around. We witnessed the cooking steps of lechon and also got the chance to meet the owner. Had a short talk and he shared his best secret about his growing business.
After the visit, we proceeded to one of the outlets of Rico's lechon which is the ACACIA branch located at Acacia Street, Ayala Access Road- at the back of Infinity Bar.
It's about time to taste the product of Rico's lechon. But hold on, before tasting it, this beautiful ambiance of the restaurant turned us on! Such a nice location to dine. Can experience the cleanliness and colorful atmosphere.
